Glutamate additives like monosodium glutamate (MSG) can cause gross obesity by increased secretion of glucose-metabolizing steroid hormones (glucocorticoids), reductions in growth hormones, lower testosterone levels in males, and lower estrogen levels in females.
Several studies have shown that MSG can also cause nonalcoholic fatty liver disease, a condition that is increasing dramatically.
This leads to a rise in cholesterol levels, oxidized blood lipids, high triglycerides, and aggressive atherosclerosis.
