NY's Staten Island Cancels Easter Mozzarella Bunny

New York City’s borough of Staten Island may be in the epicenter of the coronavirus crisis, but residents this year are in mourning over the loss of its cherished Easter mozzarella bunny.

News broke yesterday as the Staten Island Advance headlined that the borough’s popular eatery Novelli’s Pork Store had decided to cancel the mozzarella bunny in the wake of the worst health crisis in 100 years.

For 22 years, the bunnies had become a star attraction for diners, seeking a Holy Week experience made of the “freshly pulled cheese cooled into rabbit form.”

The bunnies are remembered for their distinctive olive eyes, carrot bowties, and the array of antipasti that surrounds them: sautéed peppers, salami, and even more green and black olives.

Owners John Spadaro and Joe Rivelli know the city may never be the same after the coronavirus, but the mozzarella bunny’s return next year should help return the island to normalcy.

Until then, they are keeping the bunny’s best intentions alive by providing customers with pizza rustica, made from their grandmother’s recipe using the finest eggs, ricotta, and grain. It sells for about $10 a pie.
