Egg Yolks Add Nutritional Boost: Research

Mixed messages on the nutritional benefits — and risks — of eggs has led many to avoid them, largely out of concerns over cholesterol in yolks. But new research suggests eating the whole egg — yolk and all — has a positive effect on cholesterol in individuals with the collection of health conditions known as metabolic syndrome.
The study, published in the scientific journal Metabolism, compared middle-aged men and women with metabolic syndrome who ate three whole eggs daily with a similar group of people who consumed an equivalent amount of egg substitute as part of a low-carbohydrate, weight-loss diet.
After 12 weeks, the researchers found no change in total blood cholesterol or LDL “bad” cholesterol levels among those eating the whole eggs, even though they were consuming twice as much cholesterol as they had at the beginning of the study. All participants in the study, including those consuming whole eggs, had improved cholesterol levels, with decreases in plasma triglycerides and increases in HDL “good” cholesterol.
"Eating egg yolks was actually associated with enhanced health benefits in these high-risk individuals," said lead researcher Maria Luz Fernandez, M.D., a professor at the University of Connecticut, "Subjects consuming whole eggs had greater increases in HDL cholesterol and more significant reductions in the LDL/HDL cholesterol ratio than those who ate the cholesterol-free egg substitute."
Dr. Fernandez said the findings are significant, particularly for people with metabolic syndrome — a combination of at least three of the following risk factors for diabetes and cardiovascular disease: low HDL cholesterol, a large waistline, high triglycerides, high blood pressure and elevated blood sugar.
About 34 percent of Americans are affected by metabolic syndrome.
