5 Healthy Mexican Foods For Cinco de Mayo

Mexican food may not be the first thing that springs to mind when you think about healthy eating. But, in fact, a handful of Mexican food staples are nutritious, healthy options. Here are five, in honor of Cinco de Mayo, courtesy of Fox News.

Grilled Corn: A single ear of sweet corn has the same number of calories as an apple, and is packed with fiber and phytonutrients (lutein and zeaxanthin) that promote eye health and antioxidants that help protect against heart disease and other chronic diseases.

Fresh vegetables: Tomatoes, zucchini, bell peppers, chilies, and onions are popular ingredients in Mexican cuisine and are loaded with immune-boosting vitamin C, antioxidants, and flavonoids that promote heart health, reduce inflammation, and the risk of cancer.

Avocados: Though high in fat, avocados can help lower bad “LDL” cholesterol and contain nearly 20 vitamins, minerals, and phytonutrients, including potassium (to help control blood pressure), lutein (for eye health), and B vitamins (to help fight off disease and infection).

Beans: A health source of plant-based protein, beans are low in fat and rich in soluble fiber that helps bind cholesterol and stops it from being absorbed in the gut.

Cilantro: This fresh herb is rich in antioxidants (beta-carotene, lutein, and zeaxantin) that may help decrease the risk of diabetes and heart disease, promote healthy skin and hair, and have an antibacterial effect.
