Eggs are one of the most nutritious food sources you can get. In fact, they are the only food that contains all of the essential amino acids the body needs.

Eggs also contain a high amount of cholesterol — about 424 mg per egg (according to the USDA). Sixty years ago, when we were told to limit our consumption of cholesterol and other fats, eggs were included on the list.

The vast majority of cholesterol is produced in the liver. If you eat a lot of cholesterol in your diet, your liver will simply lower the production of cholesterol.

Conversely, if you are eating a cholesterol-deficient diet, your liver will pick up its production of cholesterol.

I find organic eggs a highly nutritious item and counsel all my patients to make eggs a staple of their diet.
