The past month of our lives has been completely insane. Between selling our home and moving into a new one, our normal routines with nutrition and exercise has been very inconsistent.
When life gets hectic and priorities shift, it is so important to make a list of non-negotiable health choices and back up plans.
Here are some quick diet tips to staying on track during stressful life transitions.
1. Easy-prep meals that have lots of veggies. I recently tried a veggie lasagna from that used multigrain pasta sheets, and added some extra frozen spinach to the tray before baking it.
2. Coconut milk, frozen fruit, and fresh spinach. I keep canned coconut milk (organic) around the house so I can have a nutritious green smoothie daily. I also feed these smoothies to my husband (without the greens) and my one-year-old daughter (who doesn’t mind the greens).
3. Eggs. Organic, free-range eggs are a must in our household. They are a nutritious and quick source of protein. And I love having eggs for dinner! The other night I threw in some shredded parmesan, chopped spinach and organic non-GMO peas. It was super delicious and took 5 minutes.
